I feel like the past month has bee a blur of doctor’s visits and trying to run around to find dinner. Finally, I had my husband take care of the kids for the day while I went out and got everything that I need to make a ton of crockpot freezer meals for my family.
We went Paleo at the beginning of January and it’s been really great for all of us, but that does translate to a little more time prepping in the kitchen for meals. And anymore, by dinner time I’m just wiped out. If you ask my kids what they ate in January, they’ll tell you “a lot of eggs, bacon, and carrots with hummus.” It has NOT been a gourmet moth of cooking at all. I can’t keep making excuses for not giving them a real dinner anymore. But when lack of prep time and exhaustion are factors, what in the world am I supposed to do to get them filling and delicious food?
Naturally my answer was my go-to kitchen appliance: my crockpot! There’s not much I love more that leaving in the morning and getting home at dinner time and having dinner ready for the hungry masses (aka: my children, who I’m shocked haven’t started eating each other by dinner time).
Paleo crockpot freezer dinners saved my busy butt.
It’s absolutely the best when I know exactly what is going into their dinners and I don’t have to spend hours and hours in the kitchen while the kids are asking where diner is every 30 seconds.
Here are some of the recipes that I prepped for my family for the upcoming month.
What’s your favorite go-to meal on a busy night?

I’ve been making the Greek yogurt, and it is the tastiest, creamiest, best yogurt I’ve ever had, and no added sugar, preservatives, etc. I made my second batch from my first batch and it wasn’t sour at all, just cool creamy, goodness. Thanks for introducing me to this heavenly delight!
